Rind & Root started as a Saturday stall at the Willowmere growers' market, run by a produce buyer who was tired of watching perfectly good fruit get culled for looking wrong. Bruised pears, undersized apples, citrus with thick rind — all of it presses beautifully.
Six years later we're a permanent counter on the Bench, still buying the "seconds" crate, still refusing to keep a syrup pump behind the bar. If a blend needs sweetening, it gets a date or a ripe banana. That's the whole rule.
